Maple-Teriyaki chicken (easy)

We live outside of Washington, DC and it’s REALLY cold here right now. I think our high was 17 degrees today. We Washingtonians aren’t used to the cold AT ALL (they cancelled schools yesterday just because of the temperature) so when I had only chicken thighs and condiments in my refrigerator, I knew I would have to come up with something edible without leaving my house for a trip to the grocery store.

This recipe was such a big hit that my kids asked if I could make it again tomorrow and put it in their lunches. They wanted the chicken on a stick but I didn’t have any long toothpicks and again, was not going to the store for them but  I actually think it’s a great idea. Anything on a stick tastes better!

Ingredients:

Approx. 3 lbs. boneless chicken thighs

Approx. 8-9 tablespoons soy sauce

Approx. 8-9 tablespoons pure maple syrup

! teaspoon ground ginger

1 teaspoon garlic powder

First, put the soy sauce, maple syrup, ginger and garlic powder in a large dutch oven or pot. Then, put the thighs in. Simmer for about an hour until there is very little liquid left in the pan and the thighs are cooked through.

Take the thighs out and simmer the liquid until it’s the consistency of a glaze. Put the thighs on a broiler pan lined with foil, brush with the glaze and put under the broiler for about 3 minutes.

Sausage and cheese calzone

This recipe is really just a combination of my pork sausge recipe, bread dough and cheddar cheese. Combine the three and you have an incredible new twist on breakfast. I would serve this to company with pride. Here are the posts for the sausage and dough:

Pork breakfast sausage

First saute the sausage in about one tablespoon of olive oil. Cook for about 7-8 minutes until sausage is no longer pink.
P1010190Then, using hands covered in olive oil,  spread the dough out on a cookie tray with a non-stick silicone mat (you can grease the cookie sheet with olive oil if you don’t have one).
P1010193Shred the cheddar cheese. Cover the dough with the cheese and sausage. Then, roll the dough, pinch the ends and bake at 350 for approx. 25 minutes.
