We all have our talents and my neighbor Heather’s is baking. She is constantly making scones, cookies, cakes, and breads and delivering them all over the neighborhood to those in need or as a thank you. So, when I needed a recipe for a decadent cookie for Julia’s teacher, it was Heather I e-mailed. Here’s her recipe….it was as amazing as promised!
Ingredients:
1/2 cup organic butter, softened
1 cup light brown sugar
3 tablespoons sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoons featherweight baking powder
1/2 teaspoon kosher salt
1 3/4 cup flour
1 1/2 teaspoons instant espresso powder, slightly crushed (I skipped this step)
8 ounces chocolate chips
1. Heat oven to 375 degrees
2. Cream butter with sugars until fluffy, beat in egg and vanilla
3. Combine dry ingredients, and beat into butter mixture. Stir in chocolate chips
4. Drop by large spoonfuls onto a greased cookie sheet. Bake 10-12 minutes.
